Cream Dessert

Caledonian Cream

Serves 8

Ingredients

 For the base:

  • 4 large oranges

For the cream:

  • 250 g cream cheese
  • 250 ml double cream
  • 50 ml marmalade
  • 50 ml Scotch whisky
  • 2 tsp lemon juice
  • 30 g caster sugar
  • Grated chocolate to decorate

Method

  • Peel the oranges and remove the pith and the pips. Cut up the segments and put into the bottom of the serving dish with a little of the whisky.
  • Blend all the ingredients for the Cream in a blender or beat them well together with a whisk. (If using a whisk the shred in the marmalade may need to be finely chopped.)
  • Taste and adjust the sweetness and strength of flavour.
  • Spoon the cream over the orange slices.
  • Decorate with a little coarsely grated chocolate or chocolate curls.
  • Serve chilled.

Serve with shortbread.

To serve:

  • Use a large glass bowl or serve individual portions in wine glasses.
  • Measuring equipment
  • Sharp vegetable knife
  • Chopping board
  • Electric blender or a large bowl and a wire whisk
  • Spatula / bowl scraper
