Gin and lime jelly

Gin and Lime Jelly

Serves 8

Ingredients

  • 450 ml water
  • 100 ml lime cordial
  • 180 g caster sugar
  • 25 g leaf gelatine
  • 4 limes
  • 200 ml gin

Method

  • Zest 2 of the limes, add to the water and the sugar, bring to the boil slowly ensuring that the sugar had dissolved completely and allow to simmer for 5 minutes. Allow to cool slightly.
  • Soak the gelatine in a little cold water; when it is soft, squeeze out excess water and add to the liquid. Add the squeezed juice of the 4 limes, the lime cordial and the gin (950 ml of liquid) and pour into small glass dishes or wine glasses. Leave to set in the fridge (a spell in the freezer if in a hurry).
